Ajinomatrix unveils a self-sustained, AI-guided craft food pipeline — starting with a home growing pod

We’re building a space-grade, self-sustained craft-food pipeline with AI-guided, chef-grade self-evaluation — a symbiotic loop between cultivation and cuisine.
What we built
A solar-assisted kitchen lab loop: home cultivation → chef-style prep → structured tasting → rapid feedback for the next grow.
ABED (Always-Be-Eating-Data): a lightweight sensory method that captures hedonic liking, key intensities, and “Just-About-Right” (JAR) balance in minutes.
Explainable outputs: clear spider charts and concise “chef cards” (temperatures, timings, salt/oil JAR) that anyone can replicate.
This is a space-analogue micro-production approach: resource-aware, reproducible, and designed for continuous improvement — from apartment kitchens to off-grid habitats.
First pilot: Pioppino with Shrooly
Run window: 21 Jul → 20 Sep 2025 (61 days).
Outcome: stealth fruiting despite the device going offline mid-run; excellent tasting with a silky cap, clean woody-umami profile, and only a lightly fibrous stipe (a little Apollo 13 taste...).
Evidence: a single-subject radar (hedonic + intensities + JAR-closeness) that turns notes into data you can act on.

Why it matters
Taste you can trust: not just “it’s good,” but why it’s good — and how to make it repeatable.
From gadget to gastronomy: the device’s environmental snapshots link to what ends up on the plate.
Design loop: tweak growth (FAE/temp windows) or prep (oil/salt/doneness) and watch the radar improve.
What’s next
Scale from a pilot tasting to a small multi-taster panel.
Publish chef cards per species for consistent delight.
Explore co-labeling programs (e.g., “Taste Certified” modules) with device makers and quality institutes.
Extend the loop to more species and formats (oyster, lion’s mane, functional beverages).
